[Miyamanishiki]:With a relatively larger proportion of the 'shimpaku', the visually white part in the middle of the grain which is beneficial to polish. The aroma is moderate and with less miscellaneous taste, light and delicate.
[Kinmonnishiki]:The sake rice once extinct. Due to the difficulty of cultivation, the best polishing and brewing skills are required. The smell of the sake brewed is comples with strong umami, which makes it suitable for making aged sakes and Junmai Daiginjo.
