In the cold Uonuma City, the traditional storage method 'Snow Chamber' is used for aging the Junmai Daiginjo. There are about 1,000 tons of snow in the snow chamber of Hakkaisan, which can keep the temperature below 4 degrees. The Junmai Daiginjo is fruity and mellow as Genshu, yet not greasy. The sour taste attacks like waves and the aftertaste is refreshing.
