Aged-in-snow sake is the most luxurious one among all the aging methods that brings out the original mellow aroma and flavor of Japanese sake. The ingredient rice Yamadanishiki is grown by clear ground water under deep snow, and polished until 40%. The sake is then aged in the snow and become the Daiginjo Genshu.
