The super-sweet Junmai Ginjo is made by sake rice polished to 55% and a special 'high-ester producing yeast'. The sake is brewed with the unique brewing method of the brewery, which is about 3 to 5 times sweeter than other normal Junmai Ginjo. It is rich and fruity aroma is rich with a soft mouthfeel, you can also feel the umami of sake rice. The acidity and umami are perfectly balanced, and the clean aftertaste makes you feel refreshed.
