
A limited-edition sake to commemorate the 100th anniversary of Chiyokotobuki-toraya Brewery's founding. Back to the origin, the Junmai Daiginjo is brewed with Toyokuni sake rice.
Chiyokotobuki-toraya Brewery is located in the Sagae area of Yamagata Prefecture, with was an important production area for the sake rice Toyokuni. The protein content of Toyokuni is low while the size is large, which are the characteristics suitable for sake brewing. Unfortunately, Toyokuni rice has gradually disappeared, and in order to remake this sake rice, the 'Toyokuni Cultivation Association' has worked hard for half a century and has finally brought Toyokuni back to the world. Chiyokotobuki brewed this sake with 100% Toyokuni, with the aroma as fresh as grass, and sweet with the note of pear and honey. The light sweetness and bitterness are balanced with the slightly sour and refreshing aftertaste like grapefruit. It is very suitable to be served as table wine.
