Before brewing, the rice has to be polished in order to get rid of some unwantable substances . Once more than 50% of the rice is polished, the final sake can be graded as "Daiginjo". While a Daiginjo shows a cleaner mouthfeel with pleasant and elegant fragrance, it requires sophisticated craftsmanship and longer time to produce. That is why many are saying it is the best grade of sake.
The set includes three Daiginjo sakes from three different famous breweries with each of them demonstrating unique characters. Especially recommend to beginners!
