Concept of “Jokigen”:
“Jokigen” is the brand of Kano Brewery, Ishikawa Prefecture, which has been established since 1819. Meaning “Good mood”, the brand illustrates the philosophy of the brewery – “Good Sake Makes a Good Mood”. Adopting the techniques taught by Naohiko Noguchi, a legendary brewer specialized in Yamahai sake, who used to work for them in the 1990s and 2000s until retirement, Jokigen is well-known for Yamahai and was even interviewed by NHK.

1.Learn the Terroir of Ishikawa
How much do you know about Ishikawa Prefecture? For those who like Japan, you may have heard about Kanazawa City or the Noto Peninsula, but what about its terroir? Situated near the East Sea, Ishikawa Prefecture is often affected by snow. With Mount Hakusan located there, how will the terroir influence the culinary culture and sake brewing? Jokigen will explain to us.

2.Meet with a Sake Brewer
Yamahai might not be strange to you, but do you know how it is made? What are the difficulties? At what temperature, with what kinds of food, should we drink a Yamahai sake? For those who have any questions about sake or Yamahai brewing, it is a great opportunity to directly ask the brewer!

3.Be the First One Who Tastes the Latest Sake of Jokigen
Yamahai Daiginjo, the most premium sake of Jokigen, will be unveiled at the event. This is a sake dedicated to Naohiko Noguchi, a prestigious brewer specialized in Yamahai sake who has retired from the brewery in the 2010s, so definitely it is unmissable to all Yamahai fans. Besides, the latest product of Jokigen, Junmai Daiginjo (Hyakumangoku-Noshiro) will also debut. Hyakumangoku-Noshiro is the rice in Ishikawa Prefecture, which took the local brewers 11 years to create with the first harvest successfully grown in 2019. How will these sakes differ from Kiss of Fire and the classic Yamahai Ginjo of the brewery? Join and taste!
