Wait, Is It Wine or Sake?

The taste of sake is often described as “clean”, “crisp” and “gentle”; however, more and more breweries are trying to break the frame and build their own style. This month, Saketora is bringing you a new creative brand, Wakaze, whose sakes are so luscious that you may mistake them as a noble rot wine. Hoping to create a sake that can pair excellently with Western food, Wakaze combines wine making techniques with traditional sake brewing methods, which resulted in their distinct sweet flavors. Together with the chic label that mixes Japanese and Western art, they are definitely what all stylish drinkers should not miss out on.

GAIA - When Old Meets New

A sweet, honey-like sake with the Sake Meter Value reaching -23. With Kimoto method being adopted, Gaia is robust and rich. Yet, since it is matured in oak barrels like how wine does, it shows high complexity with a silky mouthfeel. Juicy, pleasantly tart and elegant with the notes of ripe red apple, it goes well with meat grilled with honey.

GAIA - When Old Meets New

A sweet, honey-like sake with the Sake Meter Value reaching -23. With Kimoto method being adopted, Gaia is robust and rich. Yet, since it is matured in oak barrels like how wine does, it shows high complexity with a silky mouthfeel. Juicy, pleasantly tart and elegant with the notes of ripe red apple, it goes well with meat grilled with honey.

LUNA - Sake Brewed with Sake

A luscious sake with the Sake Meter Value reaching -44. Brewed using the Kijoshu method (i.e. add sake instead of water during fermentation), Luna is full-bodied, rich and sweet. With white koji being adopted, it also shows refreshing tartness with the notes of mandarin orange that complements the sweetness. Matured in old barrels that have been used for white wine, it is elegant and smooth, a perfect match with seafood grilled with butter or cheese.
