What is Shiboritate sake(しぼりたて)?
Those who are familiar with wine should have heard of Beaujolais nouveau. Unlike the traditional brewing method, this kind of 'early wine' is fermented for just a few weeks and therefore the taste is relatively fresh. But actually not just only wine, but there is also a kind of 'early sake' (known as Shiboritate) which is using the sake rice harvested in autumn as the main ingredient. As the fermentation time is short, the taste of Shiboritate is fresher by comparing to the aged ones.
Although Shiboritate is not as rich and mellow as aged sake, it is fruity, sweet and with fresh aroma. It is also dry and stimulating which can clear your taste buds. So if the sake is chilled served, it would be the best companion for fried or thick sauce food!Shiboritate is winter limited. If you miss it this time, you may need to wait for another year!
