Aged for a long time in the largest snow chamber in Japan, you can feel the energy brought by the power of nature.
Since 2013, the huge sake barrels that can store 360,000 liters of sake have been stored in a snow chamber maintained at 5 degrees Celsius throughout the year, and matured at a low temperature for a long time in the cold air of the natural snow. The sake brewed is mild with and fruity aroma. the refreshing mouthfeel is accompanied by a slightly strong umami, while the aftertaste is a little bit dry. The mellowness that brought by the low temperature for eight years is suitable for pairing with food.
Although it has been aged for 8 years and with strong and mellow impression, but it does not have the smell of over-aging as it is aged for a long time at low temperature. The slightly yellow sake allows you to fully enjoy the natural energy from nature.
