
It is called as special junmai, but it is actually a Daiginjo class sake that has a 50% polishing rate. Aged at low temperature, it is sweet as ginjo while the taste is as deep as Junmai.
The highest grade junmai sake that has been is brewed by Gohyakumangoku sake rice polished to 50% and aged at a low temperature for a long period of time. Mild ginjo aroma with a hint of vanila, and a rich taste reminiscent of cereal biscuits. The sake is full-bodied and suitable for dishes with strong flavors; it is refreshing when it is served cold, and full of the umami of rice when it is warmed.
