With mild aromas, this Junmai Daiginjo is, however, rich on the palate. It shows the fresh acidity and sweetness of green apple on the attack, then soft lactic acid on the mid-palate. The overall texture is between traditional sake and white wine. It especially goes well with dishes that have sour flavors such as salad seasoned with lemon juice and oyster.
