A brand new type of Junmai that made with yeast extracted from olives grown on Shodoshima Island located in the Seto Inland Sea, it is sweet with a plump and smooth aftertaste.
The taste is fresh, sweet and a smooth aftertaste, with a gorgeous lychee-like aroma, followed by a sweetness with the notes of peach and mango. Very sweet, but with an excellent balance of sourness and a smooth and clean finish. Since it is the genshu that has not been adjusted with water, the richness of sake rice can be fully brought out. Using Sanuki Olive Yeast No. 18, extracted from olives harvested in Shodoshima, together with Oseto sake rice from Kagawa Prefecture to brew. The entire production process is brewed in a small brewery and is therefore almost entirely handmade. Immediately heated after squeezing out the sake liquid, then keep it fresh in the refrigerator at 0°C. Pairs wonderfully with appetizers, cream cheese dishes, fruit dishes and desserts such as apple pie.
