Premium Junmai Daiginjo of Kuromatsu Hakushika. Platinum at London Sake Challenge 2020.
Brewed using the A-ranked Yamadanishiki grown in Kato City, Hyogo Prefecture, and the famous underground water, "Miyamizu", this Junmai Daginjo is fruity with the notes of melon, green apple and green leaves. Rich and robust on the attack, it is fresh on the mid-palate with pleasant acidity. Fermented under freezing temperature, it is clean and crisp overall, so it pairs well with lightly-seasoned dishes like sashimi and steamed chicken.
