Brewed using the A-ranked Yamadanishiki from Hyogo Prefecture that is polished down to 35% and the Fushimi underground water, this Junmai Daiginjo is complex and rich. At the beginning, its aromas are mild with the hints of strawberry, green apple and white rice; however, after 20 minutes it is opened, the aromas become more complex, evolving into banana and melon with a touch of butter and yoghurt. Overall, it is elegant and mellow with a marshmellow-like texture and an excellent balance of umami, sweetness and acidity. The finish is smooth and round. Saketora suggests serving it in a red wine glass so that you can feel the subtle aromas and changes better.
