100% using Yamadanishiki from Yoshikawa-cho, Hyogo Prefecture. Polished to 38% and slowly brewed by the unique 'Sohana Yeast' under low temperature, the taste of this Junmai Daiginjo is unique. It is fruity with the notes of melon and peach, and the aftertaste is slender and full of honey-like sweetness and umami. At cold or at room temperature, it is refreshing as Ginjo; while at warm temperature, it is deep as Junmai sake, giving you different experience and surprises at different temperatures.
