Yamadanishiki sake rice is polished to 50% and the alcohol percentage is controlled at 15⁰ during the mash-making process, the genshu (origin sake)is directly put into bottles. The newly introduced pressurized sterilization device is then used for sterilization. The sake is heated and cooled in short time which makes the taste more refreshing. With the note of apple, mango and peach, the taste is fruity, silky and smooth. The acidity is moderate which is suitable both for beginners and professionals.
