Difficult to grow and easy to crack when being polished with high water absorbability, Omachi is regarded as the rice that is the most difficult to handle, so Daiginjo made of it can seldom be found and polishing ratio down to 40% or below is even rarer. This Junmai Daiginjo, however, is brewed using the Omachi polished down to 20%, which is literally a mission impossible and revolutionary in the sake industry.
Elegant and fruity, it shows the notes of strawberry, melon and pear, with the hints of lily and fresh basil. The flavors gradually evolve on the palate. Soft on the attack and firm on the mid-palate with gentle lactic acid and flavors of rice, it is delicate and mellow with a perfect balance.
