Brewed using 50% polished Gohyakumangoku, the Junmai Daiginjo is primarily fermented in old wooden barrel, then goes through 2nd fermentation in bottle like champagne. With the production taking twice the usual time, the bubbles are fine and vivid. Paper-white with the notes of white rice, milk, strawberry and green apple, it is crisp and soft on the attack with pleasant umami and acidity on the mid-palate. As it is zero dosage, the finish is dry and refreshing. It is best served chilled with champagne flute. With high acidity, it can pair with a wide range of cuisine like Japanese, Chinese and Western dishes. It is so outstanding that it was even selected to serve VIP guests like the Japan's prime minister in the banquet of Tokyo International Conference on African Development.
