It is brewed from the natural water from ''Amou Mountains'', which are known as "Hida's last secret place" in the Hida area and Shirakawa-go. The water had used 500 years for gushing out of the ground and there is a legend that there was a monk who drank the natural water every day and obtained supernatural powers that could cure all diseases. Although it is only a legend, the natural water is actually hard water with extremely high purity, which can give full play to its vigorous fermentation power.
The sake is gorgeous and fresh, with moderate acidity and a mild taste with the notes of apples and pears. The light and refreshing aroma is followed by a refreshing aftertaste, giving a beautiful impression like a natural spring.
