In order to bring out the umami of sake rice to the maximum, the rice is specially polished in a low temperature environment, so that the taste of Daiginjo is transparent and mild, and full of the aroma of rice. Melon-like soft and elegant sweetness, balanced with the acidity, the mouthfeel is silky and smooth, allowing the drinker to feel the craftsmanship of the brewer.
