The Yamadanishiki from Hyogo Prefecture, also known as the 'king of sake rice', is polished to 35%. From rice washing, koji making, to the extraction of sake are all done by hand. The famous water gushing from Mt. Takanawa is used as the raw material for brewing, and mouth feel is smooth and full of gorgeous fruity aroma. Sweetness and umami joint together and you can feel refreshing in the throat.
