Brewed using 100% Yamadanishiki from Shizuoka Prefecture, this Junmai Daiginjo is fruity and refreshing with the notes of banana, melon and grapes, followed by some hints of green leaves and yoghurt. Sweet on the attack, it shows pleasant acidity and minerality on the finish, so the balance is great. Pressed with the traditional method through an 8-level tank, it has received very little pressure, so the mouthfeel is delicate and soft. Matured at freezing temperature for 9 months, it is mellow and complex overall. *Limited production. Hurry while stocks last.
