Excellent sparklinig Junmai Daiginjo officially used by the biggest road race championship in Japan.
With the fermentation and maturation both taking place in bottle at low temperature, the sake preserves perfectly the bubbles created during production. Overall, the bubbles are creamy and soft. With the lees left in the bottle, the sake is paper-white and slightly cloudy. With the hints of white rice, peach, lychee, apricot and milk, it is soft on the attack with a mouth-coating texture and pleasant umami on the mid-palate. With quite high acidity, it is refreshing on the finish. Since special design is adopted, the cap can be opened and closed easily and the bubbles can be kept longer.
