
Brewed with Sankeinishiki sake rice from Nagano Prefecture, a sake which is combining technology and the dream of the brewer.
In the generation where Yamada Nishiki sake rice is popular, the brewery insisted on using the Sankeinishiki sake rice produced in Nagano Prefecture. Polished to 40% to bring out the richness and silky texture. The aroma is soft, reminiscent of apples and bananas, mellow and transparent. The slight sourness comes into play in the finish, bringing a perfect clean finish. Using pure groundwater in the Southern Alps in Japan, the sake is squeezed out by bag-hanging method without pressure, and the Junmai Daiginjo is full of transparency.
