The sake is fermented slowly at low temperature, so the yeast activity becomes less active, leading to a more elegant, fruity and floral profile - melon, peach, green apple, lavendar, honeysuckle and congee. Drip-pressed with small cloth bags, it has less contact with air and pressure, so the final texture is complicated, rich and delicate. To better enjoy the aromas and minimize oxidation, it is recommended serving in a white wine glass.
