Compared with the other sakes, it uses a longer brewing time, so it is smooth and mellow.
Using the spring water from Kurobe, and sake rice Yamadanishiki which has been polished for 60 hours as the ingredients. The fermentation mash is made for a long time of 40 days and the sake is aged at low temperature. Such a delicate process makes the Daiginjo exudes a sweet aroma like melon and pear, and the taste is as light as snowflakes.
