Using "malic acid high-yield yeast" that is not commonly used in general sake brewing as the raw material, the aroma is reminiscent of freshly picked apples, refreshing and pleasant. The mild sour and sweet taste like yogurt gives it a white wine-like flavor. Although the finish is light, it has a sense of maturity and minerality which would bring you surprises.
