By using the well water drawn from the shell layer of Boso Peninsula, which is one of the hardest water in Japan, the fermentation is sped up and the sake would become sharp and rich. In addition to the use of the 'Gohyakumangoku' sake rice , the sake is as light and refreshing as white wine.
