Polished up to 55% of 'Tamasakae' sake rice, which is said to be large and difficult to polish, the sake is sharp and dry. By using one of the hardest water in Japan for fermentation, the sake is refined. The sour and savory taste goes well with salty dishes such as grilled fish and cheese.
